These cookies remind me a lot of gingerbread cookies, however these are softer and more chewy.
Ingredients:
1/2 cup unsalted butter
2 cups flour
1 cup brown sugar
1/2 cup white sugar
1/4 cup white sugar for sprinkling on cookies
2 large eggs
1/2 cup molasses
2 tbsp vegetable oil
1 tsp baking soda
1 tsp ground cinnamon
1 tsp ground ginger
1 tsp ground allspice
1/2 tsp salt
To make the batter start by mixing the butter and both sugars in a mixing bowl. Once blended smooth add in the eggs, followed by the oil and molasses.
Next you can add in the flour, baking soda, cinnamon, ginger, allspice, and salt. When this is all thoroughly mixed you can pour the batter into a smaller bowl and wrap with plastic wrap, then place it in the fridge for a few hours to chill.
With the batter chilled you can now start preparing the oven, set it to 325F. Prepare your cookie tray by covering them with parchment paper, then drop small balls of batter spaced about three inches apart. Please note that these cookies really spread out as they are baked, so try to make the drops small and widely spaced apart. Baking should take about 16 to 18 minutes. Around half way through the baking process you can sprinkle some white sugar over the cookies, this will caramelize and give the cookies a nice finish.
Hope you enjoyed this recipe!
