Chocolate Drop Cookies

Another in a series of chocolate inspired desserts, these cookies impress with their simplicity.


Ingredients:

1 cup butter.
1 cup icing sugar
1/4 tsp salt
2 tsp vanilla
2 1/2 cups flour

Filling:
3 tbsp butter
3 oz semi-sweet chocolate
1 tsp corn syrup


Whip butter. sugar. salt. vanilla. and flour together in a mixer until smooth. Then take tablespoon sized drops of batter and roll into balls, placing each approximately 2 inches apart on a cookie tray.


Bake the cookies for 7 to 10 minutes at 350F, then remove from the oven. The cookies will not be cooked, this is when we add the chocolate to the cookie :)


Traditionally one would make an indent in the middle of the partially baked cookie, then return the cookie to the oven to finish baking. Once baked you would then prepare a filling for the indent (recipe above) then pour it into the cavity. For simplicity's sake I just use a cheap bud chocolate, pressing one down into the center of each cookie.


It takes about 10 to 12 minutes to complete the baking once the chocolate has been added to each cookie.
